It’s World Photography Day today .
I really love taking food and drink photos and it’s something I want to do more of .
Here’s one of my favourites from a few years back . The fine mist coming off the magnificent Powerscourt Waterfall reminded me of vapours condensing in the copper stills and I wanted to try to capture that in the glass . Liquid ➡️steam ➡️Vapour ➡️spirit .
The gorgeous @tuathglass was the perfect glass for this shot , I love how the liquid appears to merge through the stem back into the Wicklow Mountain water where it all began. Full circle 💚 #spiritofwicklow

This day 25 years ago this young lady made me a mother, made my parents grandparents , made my brothers uncles , and a whole lot of my friends became her fairy godmothers . 🧚‍♀️

Niamh has been so adored since the moment she was born and she has radiated it right back ever since ☀️

I can’t quite believe it’s been 25 years, lucky for her there was no instagram back in the day or her childhood obsessions with dinosaurs, elephants and unicorns would have been chronicled!

She’s now working in the wonderful world of Irish whiskey so give her a follow on @whiskeyniamh where she doesn’t post so much about dinosaurs but she does post her whiskey adventures 😘

I’m very happy to share that I recently completed the WSET Level 2 in Spirits and following the exam I have ‘Passed with Distinction’ .

Full credit to Philip at @vinspireacademy - the course material was interesting but he made it really fascinating! He’s an excellent teacher and his communication style is very much about sharing knowledge . Thanks to my study pal @sineadsmyth1 for making learning even more fun! I’ve been lucky enough to meet some truly inspirational people over the last few years , but I really count my blessings that I got to meet @anthonyotoole_ , someone I’ve admired, then worked with and now consider a great friend .

What Anthony does not know about growing. , cooking and preserving, isn’t worth knowing. He has introduced me to so many great characters on the Irish food scene, who value his opinion and knowledge.
His eye for detail and meticulous planning mean his events are always outstanding and I love his unwavering commitment to sourcing high quality sustainable Irish produce .

His friends have known about his Fat Tomato project for the last while and we have been eager to see it started . We’re delighted that @fattomato__ is finally here!

I know what’s coming in this range will be the highest quality of produce, both fresh and preserved , food grown and cooked with love , beautifully curated with every level of flavour and packaging detail considered.

Huge congratulations Anthony , this launch is long awaited , I’ve been lucky enough to sample some tastings - the Irish food scene is in for a big treat . 💚🍅

The garden is bursting with salad at the moment ,and I picked up lots of other seasonal and local treats to inspire this weekends grazing…
Salad includes homegrown leaves, scallions, courgettes, last nights leftover Wexford spuds, grated @caisnatire , @builin_blasta_cafe Caesar dressing , croutons made with @wicklow_rapeseed_oil and @carraigruabakery sourdough, @killruddery bacon and @sicinsasta chicken .
Topped with my first ever successful homegrown courgette flower stuffed with @leitrimhillcreamery cheese and thyme, battered in a @wicklowwolf beer batter and airfried .
Washed down with a very refreshing @allaboutkombucha .

The #pinsín ( my Irish version of a Pintxo!) is @mcniffesboxty with leftovers of last nights gorgeous Dexter striploin from @drumanilra beef , homegrown leaves and edible flowers and @builin_blasta_cafe Spiced Smoked Onion Mayo .

Every single ingredient is Irish.

I love listening to podcasts, so I was particularly delighted to take part in this one. Thanks to the hosts @oisindavis and @deelaffan for inviting me on to their great new show @bearbiapodcast to talk all things Wicklow food and drink. I was chuffed to be their first guest 🥰
We genuinely had such great fun recording this and I was delighted to meet @barrywallace_ from @dashburger_ , along with @celinastephens0n ftom @wicklowwaywines and John from @wicklowwolf . Oisin & Dee curated a lovely menu of Wicklow snacks and drinks to taste and discuss including @ridgeway_wagyu in the burgers, @ballyhubbockfarm cheese bites washed down with some Wicklow Wolf Beer and Oisin’s very own ‘Wicklow Wanderer’ cocktail made from @wicklowwaywines Raspberry Wine and @fercullenwhiskey from @powerscourtdistilleryltd .

This reel is a snapshot of the (970 !) photos I took to try to capture the varieties of wine and cuisine we sampled. I look forward to sharing what I have learned about the DO’s, tradition, innovation, quality , soil types, vine varieties and ages, cellars, wines aged in stainless steel, oak, ancient amphorae, underground, overground and even wine that’s aged to music to mimic the earth’s vibrantions.

🌤️ what was very interesting to me was the realities of climate change in this region and the very earnest endeavours to manage the challenges and to work sustainably.

I was really fascinated by the organic viticulture and was delighted to hear more about biodynamic winemaking ( and farming) which is really igniting my curiosity lately .

Looking forward to sharing more about some of the food and wines I tasted , especially those available in Ireland.

The Long Goodbye!

Yesterday was really, really, really my last day at @powerscourtdistilleryltd and so it was especially nice to welcome one of my favourite travel journalists @poloconghaile for a tour and tasting . I couldn’t resist one last chance to tell the story of why gorgeous Irish food and drink should be an integral part of our Irish tourism offerings. Thanks Pól for your interest, I’m proud that my ( now former 🥲) colleagues continue to fly that flag, and celebrate our local food and drink produce with passion!

(The visit coincided with our team fun day with @orangeworksie , which meant I missed out on the axe -throwing and rifle range !!! I couldn’t have timed it better 😂😂😂)

All this chattin’ was followed by a demo on the @marksandspencerireland stage making easy entertaining Pinsín (my Irish Pintxos) and Irish drinks, thanks so much to gorgeous MC @ericadrumie Thanks also to the team at the demo kitchen stage - everyone was really cheerful and helpful 🥰🙏

Loads of offstage chats with the fabulous Anna and Orla from @valentiaislandvermouth, tastings of the new @fercullenwhiskey Cask Strength and great post demo chats with Peter from Coolattin House and the ever gorgeous Anne Doyle . It was lovely to meet @cassiestokes too, I’m a big fan of her page for the really genuine reviews of great places to eat and drink around Ireland .

There were many delicious food stands and I loved the focus on excellent Irish ingredients especially @thesaltproject.ie where I returned many times for their jambon with @kylemorefarmhousecheese cheese and their picnic box with @leitrimhillcreamery .

Great music all weekend too, I particularly loved hearing @thevictorydolls 💃🏻💃🏻💃🏻

📣📣Some NEWS!! 📣📣

After 5 fabulous years at my favourite job ever, I am moving on from the @powerscourtdistilleryltd .

Looking back through the photos of the last 5 years - there are thousands! - reminds me that this was a role where no two days were the same and the fabulous people I met made me smile every day.

I’m forever grateful to my colleagues at Powerscourt Distillery who have been so incredibly supportive of my ideas and projects and together we have all created some really meaningful events and experiences. I am so very proud that this work has made Powerscourt Distillery a shining example of how Irish food and drink linked with Irish culture and heritage can offer an extraordinary food tourism experience.
I’m also really proud to see how we have worked with so many other premium artisan Irish food and drinks alongside our @fercullenwhiskey .

Powerscourt has always been a place very close to my heart and my history, and it was indeed a very special occasion to celebrate the launch of the Fercullen Single Malt last year, the first whiskey released in Wicklow for over 100 years. 💚

I’ve a couple more events coming up with @fercullenwhiskey over the next few weeks, including @tasteofdublin where I’ll be talking at the Food for Thought stage. I’m sure they’ll have me back at Powerscourt Distillery from time to time 😉

For now though it’s a few weeks of R&R ( research & reading / maybe a bit of rest & relaxation ! ) .
I’ll be starting my new venture in August so please stay tuned! Needless to say there will be a strong focus on celebrating the intersection of Irish food and drink with Irish art, culture and heritage .

I was delighted to take part in the @ndc_ie panel discussion on ‘60 Years of Irish Food’ at their super show garden at @bordbiabloom festival. Thanks to my fellow panelists @deelaffan and @culinaryireland Regina Sexton and to our host @alidunworth .I really enjoyed the chat😊Thanks also to Cathy Curran for the invitation and huge congratulations to @tundelandscapes on her fantastic showcase garden!

I spent a beautiful day at the stunning @whitestow

I spent a beautiful day at the stunning @whitestown_house in the midst of North County Dublin countryside .

The day was hosted by Mum Hazel and her daughters Aoife and Kelly, who have created the most wonderful and intimate events venue at their historic family home.

The day started with welcome refreshments served in delicate china teacups with dainty homemade scones. After a brief tour of the reception rooms of the house we were welcomed outside on a fantastic foraging walk by Denise of @theherbschoolireland . Denise struck the perfect balance between being informative and entertaining and as we wandered through the glorious grounds in lovely sunshine she revealed a banquet of delicious wild food hidden in plain sight. From elderflower to nettles to alexander seeds we were encouraged to smell and taste everything.
We were greeted on our return to the house with a welcome chilled glass of bubbles before taking our seats at a beautifully set lunch table. Gorgeous Irish linen napkins and table runner by @nicola_weldon10 enhanced the already stunning tablescape that had been arranged by Aoife. Meanwhile Kelly had prepared a delicious wild food lunch, including many ingredients foraged and home grown either on the estate or locally sourced. I loved each course - the light and savoury nettle and wild garlic tartlet was particularly delicious; the home reared chicken in the caesar salad was so tender and the pannacotta with rhubarb was a light and elegant finish. Served with homemade kefir- this meal was the perfect way to finish a glorious morning of fresh air and fun. The atmosphere was so convivial and our hosts made sure that the conversation flowed with the many wonderful anecdotes from their years of entertaining their own guests at @whitestown_house .

@whitestown_house also run @thediningclub, which is a wonderful way to enjoy similar events at this house. It’s also available for private and intimate parties with dining available for up to 20 guests. I’m certainly looking forward to my next visit 💚
